To signify the double portion of manna that was collected for Shabbat we place two Challah breads on the table to grace our Shabbat meals. The extra loaf of bread on a deep level
also signifies the extra Shabbat soul we receive called the Neshama Yeseira. Similarly Shabbat is considered Maien Olam Habah a taste of the world to come.
On Shabbat we seek to create a most transcending atmosphere. The physical ambiance of the Shabbat table where an extra Challah beyond our needs is placed next to the one we are to consume helps stir a consciousness that on Shabbat we must seek to connect to a world beyond our physical needs. The second Challah also reminds us to feed others that are physically and spiritually hungry. Again the emphasis is to reach beyond ourselves.
